Lake Mountain Alpine Resort – or more correctly – SUMMER SPORTS!

(I don't normally discuss other things, but Lake Mountain Green Activities is benefiting the Community and creating employment, so I thought it fit to post here)

In January 2012, I was lucky enough to win tickets (via Facebook)to visit Lake Mountain for their summer activities. Lake Mountainis 30 minutes from Marysville and is known for its skiing, during winter andthe rest of the year mainly motorbikes and cyclists, but now you have theopportunity to enjoy Lake Mountain all year roundwith the introduction of summer activities.

There was live music, activities for young and old, hotcoffee or cool drinks depending on the day and the views are amazing. You can do something as simple as enjoyingthe view and seeing the bushfire devastated area regenerate, whilst listeningto live music.

The young children can colour in or play on the HUGE inflateddinosaur wonderland. The older kids can enjoy the flying fox or go with a(licensed) adult in the dune buggies OR all-terrain vehicles, travelling with aguide and getting VERY dirty in the process! Or if you're game enough, there is a circuit JUST for children to enjoy driving their own dune buggy. (suitable for 7yrs and up)

All safety equipment is provided and the fun to be had is fantastic.

I was approached to do something for the Charlton area similarto the Marysville Cookbook. I was promised by an individual that they wouldorganise the printing and distribution, after many lies, and refusedcommunications (registered mail) on their behalf. They accused me of copyright**and various other slanderous things, then proceeded to drop the ball.

Someone else picked up the ball, but they didn’t seem thatinterested either. So the cookbook languished somewhere on someone’s desk,until I requested that the material was returned to me.

I attempted to source funding, but was unable to, the delayswith the original person, meant that people were no longer interested inhelping a community that was better off forgotten in their eyes, because thingswere ‘okay’ Which I can assure you they are NOT.

Not long after a gentleman contacted me and advised that hewould be taking over and thought it a brilliant idea and he would take over,source the funding and similar. I thought that perhaps this was the opportunityfor me to help a community so in need. (for the second time)

Alas, it has not worked. No funding has been sourced,another local large (international) community group has now created a cookbookfor the area. Which means that there is nothing further that I can do to help.

So, the Charlton Cookbook is no more and consequently allmaterial relating to this project will be destroyed and the people who assistedwith the supply of the photos etc, will be informed that this is the case.

I’m sorry – but I can do no more.

Eextraordinary 10-Second Hero Competition (Run by Lenovo)

I would like to say thank-you to everyone who supported and voted for me, during the running of Lenovo Competition and the possibility for Marysville to win $50,000.

Marysville wasn’t chosen as the overall winner, a group using the name of ‘Operation Smiles’ were the final winner.

Congratulations to Operation Smiles, They are a group based in Bogota BC, who help people with Cleft Palettes and gives them their smile back. They are based in Bogotá BC.

One person/One group CAN make a difference as has been proven by the many applicants who have made a difference in their part of the world.

It takes one idea, one person and the rest is history!

My difference has been $4900 (so far) raised for the Marysville Community, the township devastated by the 2009 Black Saturday Bushfires.

Thank-you again.Don’t forget that Christmas is almost upon us and the Marysville Cookbook would make a great gift idea even for the most seasoned cook. I was one of 18 entrants world-wide to be considered to win $50,000 for the community of Marysville. I consider myself lucky to have been chosen, and still consider it a privilege for Marysville Cookbook to have been chosen.

A treasured cookbook helps Marysville heal, as written by Meagan Weymes

INSIDE Heather Samsa’s kitchen is an old cookbook filled with handwritten recipes, lovingly passed down from her nanna and her mother. The book holds more than just recipes, but memories and knowledge passed down through generations. The importance of the book only struck the Eden Park mother-of-three after the Black Saturday bushfires tore through her home town of Marysville.

Samsa arrived at 5.30am as the fires were still burning, and what she found was devastating. ‘‘Everything was gone. It was just gone. How else can you describe it?’’

It was only after the fires, when a close family friend broke down crying to Samsa because she couldn’t remember her mother’s jam recipe, that she realised she could do something to help. Within four months the Marysville Cookbook was at the printers, filled with the recipes passed down through generations.

‘‘I realised that if I could help one person smile, then that would make all the difference and if I can help one person I could help the town,’’ she says.

The first of the 300 books were handed out as gifts at community meetings, and the rest were distributed over months by Samsa’s parents from boxes in the boot of their car.

Then people started to approach Samsa wanting to buy the book. After a reprint, she created a blog and started promoting the book via Twitter and word of mouth. Since then, 430 copies have been sold, reaching as far as England, Italy, Switzerland and around Australia. For each book sold, $10 is donated to Marysville.

In addition to the recipes, the book has photos of Marysville before the fires. Samsa says it never crossed her mind to add photos of the fires or the affect they had on the town.

‘‘I still can’t look at Marysville without breaking down in tears so instead I just wanted to focus on what was and what can be for the town. People don’t need to be reminded what caused the damage.’’

Years later, Samsa has been recognised after being selected as a finalist in the Lenovo 10-Second Hero competition. The prize for winning the competition is a $50,000 donation. Despite the recognition, Samsa says that was never her intention.

‘‘Most people in Marysville don’t even know I exist; they know who my parents are and some of them have met me but the majority haven’t. So it’s not for personal benefit. It’s not about me, it’s about the town.’’

As ~~the only Australian~~ Finalist in the Lenovo 10 Second Hero Competition, I am rather nervous. Originally I was the ONLY Australian from 24 world-wide, it would appear there has been a further cull and only 18 entrants have made the final cut, with an extra added from Australia, the ONLY Country to have this occur.

40hours and counting…. EExtraordinary Lenovo 10Second Hero Competition

The Marysville Cookbook has been selected as ~~the ONLY Australian~~ Finalist in the Lenovo 10Second Hero Competition, a further entrant was added, which is different to the rules stated. (But it's Lenovo's Sandpit!)

I’ve been watching the days and now the hours ticking over faster and faster. It was only Tuesday last week that I found out the Marysville Cookbook had made the finals.

I read and re-read the competition terms, read them again….. and I still can’t believe that the Marysville Cookbook has even managed to reach the finals.

The number of finalists per country are:- United States – 4, Australia – 1 ,Philippines – 1, Malaysia – 1, The United Kingdom – 1, India – 2, Canada – 2, Thailand – 1, Indonesia – 1, Turkey – 2, Poland – 2, The Czech Republic – 1, Germany – 1, Spain – 1, Mexico – 1, Columbia – 1, Argentina – 1

As you’ve read previusly, the video has been submitted and will be available to vote on, as at the 14th September. You will be able to vote on the video here EExtraordinary Lenovo 10Second Hero Competition (I will post the link again – on the 14th)

Marysville Cookbook, Lenovo 10Sec Hero Competition & Twitter.

Sometime in late July, early August, @kerrypintado from Twitter sent me a link about the Lenovo 10Sec Hero Competition. I entered the Worldwide competition, which was to win $50,000 for a community/charity of the winners choice. I didn’t think I had any hope of winning.

The rules stated “submit ONE essay that describes how you have or someone you know used 10 seconds to become someone’s hero or how you or someone you know has done a good deed in 10 seconds”

The competition rules said 150 words, so I duly trotted off and in 10 or so minutes, figured something out that would be 150 words, then the frustration started. It turns out it wasn’t 150 words, but 200………….. Took me a while to figure that one out!

I pressed the send button, then promptly forgot about the entry. I mean ONE winner world-wide for $50,000, there would be 100’s of thousands of people from around the world applying, surely?

On Tuesday I received an email telling me that I am A FINALIST. ~~The ONE~~ Australian chosen to show the world what one person can do for one community with one book!!!!!!!!!!!!!!!!!!! WOW……….

1 of 24……… Who would have thought? I only had 72 hours to put together a short video presentation of no more than 5MB. I reached out to the Twitter Community and hands reached out to help me.

Now the crux of the problem, I had to create video to show off my handy work, for someone who is camera shy and prefers to be behind the books and not on the front cover. I was a little shaken up – By Tuesday night the voice component was done, by Wednesday the whole video was completed and sitting on my desktop.

After re-reading the rules of entry for the competition, I realise that once the video component of the entry has been submitted (and received) I receive a Lenovo laptop computer, just for entering and being a finalist. I was gob-smacked to say the least.

I am about to press the send button on the video submission, wish me luck and come back on the 14th of September for the link that takes you to the voting page. The rules state ONE VOTE per person PER DAY. So don’t ruin it for Marysville.

The Marysville Cookbook, supporting a town devastated by Black Saturday Bushfires

The Cookbook for Marysville came about after the February 2009 fires, now known as the Black Saturday Fires.

The Marysville Cookbook was originally created as a gift for residents of Marysville after one life-long resident couldn’t remember her mothers jam recipe. 300 copies were given to the residents at no cost. At that point in time, the residents didn't need money, they didn't need sympathy - they needed something that was theirs and theirs alone. Something that would help them, keep family, mind and soul together. There was a message of hope, a message of thanks and recipes just like nanna and mum used to cook - comfort food, no complications, no spending 2 hours slaving over a hot stove, that you didn't have. They are all simple recipes, with simple ingredients.

What you may not know, is that no national or even small business is funding this project. All except for $962.00 (for the first run) came from my own pocket.

You may wonder why I bother (I’ve been asked why I bother) I bother because it’s where I grew up, it’s where my parents live. The town and people hold many memories for me.

I didn’t do this for the fame or fortune (still in the red) I created the Marysville Cookbook because it was the right thing to do.

Chicken in Apricot Nectar

(Special Request) - for my friend in Wagga, NSW!

1.5kg of Chicken Pieces
2 Medium Onions, Optional
60g of Butter
1 Tbspn of Cornflour
425g of Can Apricot Nectar
1 Packet of French Onion Soup

Melt the butter in a frying pan, add the chicken and cook until brown, Remove the chicken and add the sliced onions to the pan, sauté until soft. Add the flour and mix until well blended, Place the onions mixture, the soup mixture and the apricot nectar into a casserole dish, mix, then add the chicken, making sure the chicken is covered by the mixture. Place in a 180’ pre-heated oven and cook until the chicken is cooked through. Serve with rice or vegetables.

The cookbook for Charlton has now been compiled, completed and will now be sent for printing then distributed to residents of Charlton and surrounds as a morale booster.

The photos obtained were magnificent, thanks to The Golden Grains Museum in Charlton, Paul Bartlett, Graham and Joy Gretgrix, Hadyn Jones, Kellie and Bruce Madge and Clinton and Carolyn Olive. Who have generously allowed their photos to be re-produced within the cookbook.

Some photos date back to 1895.

The book is not for sale only as a gift from one town to another in a time of need

COOKBOOK INSPIRES COMMUNITY TO RAISE FUNDS FOR BUSHFIRE VICTIMS.
DATE 2011: We can’t do everything, but everyone can do something. This is the philosophy for Heather Samsa who grew up in the bushfire affected town of Marysville, and is pulling out all stops to raise much needed funds for disaster stricken locals and businesses in the community.

On Saturday 7th February 2009, now known as Black Saturday, saw the state of Victoria devastated by uncontrollable bushfires. Many towns were wiped from the map, thousands of buildings were lost and 173 people perished.

The devastation of Marysville was almost total. Heather Samsa’s family who still reside in Marysville witnessed the devastation first hand and were lucky enough to save their house, but most of the town were not this fortunate.

One local lady inspired Heathers fundraising journey after she discovered that her mother’s jam recipe did not survive the bushfire, and she could not remember how to make it. In a time when most people feel helpless, Heather decided not only to donate, but to take it one step further.

“I realised that Marysville did not need or want money but something from the heart, something that was just for them and that is how i came up with the idea of the Marysville Cookbook” said Heather Samsa.

“Originally the idea was for me to just produce and print some books and give them to the local residents. My total budget of $2550 produced 300 cookbooks for local residents, $750 of that donated from generous construction businesses and the remainder from my own pocket”

“I am forever thankful to the local businesses Prespa Cabinets of Epping, Makedonia Furniture in Preston and Rendis Builders in Preston who made generous donations in the first run of cookbooks” said Heather

It soon became clear to Heather that people wanted to buy the books so they could also do their part. Heather then commissioned a second print run and the book is now for sale at $30.00 with $10 from each and every book, returned back to the town through various community ventures.

“As of the 4th of March 2011, the amount of $3480 has been raised and given back to various community groups in the town and I am absolutely thrilled that I could give to these people emotionally and financially” said Heather

“The Marysville cookbook is not your average cookbook; it contains recipes that have been handed down from my Nanna and my mother, as well as a few of my own! These recipes are mostly old-fashioned, simple and wholesome recipes that don’t require a great deal of attention or hard work”

“The 165 page book, also contains a message of hope for Marysville residents, a special thankyou to emergency personnel and 28 pages of photos of the old Marysville taken by residents both past and present”

Marysville Bowls and Golf Club, Marysville Anglican Guild, Marysville and District Cricket Club, Marysville Football and Netball Club and Marysville Kindergarten and Primary School are amongst some of the lucky recipients of the proceeds from the Marysville Cookbook so far.

Meat Loaf with Onion Sauce

50g of Butter/Margarine
1 Tspn of Paprika
2 Medium Onions, Finely Chopped
450g of Minced Beef
65g of Fresh Breadcrumbs
1 Clove of Garlic, Crushed
4 Tbspn of Tomato Paste
Salt & Pepper to Taste
1 Egg, Beaten
15g of Plain Flour
1 Tbspn Chopped Fresh Mixed Herbs
300ml of Milk

Grease a 450g loaf tin, then line the base with greaseproof paper and set aside. Melt 1/2 the butter in a frying pan, add half the onions and cook until softened. Add the paprika and cook for 1 minute, stirring and then turn the mixture into a large bowl. Add the beef, breadcrumbs, garlic, tomato puree, herbs and salt and pepper to taste. Stir thoroughly until evenly mixed, then bind with the beaten egg.

Spoon the mixture into the loaf tin, level the surface and cover tightly with foil, Stand the tin in a roasting tin and pour in water to a depth of 2.5 cm. Bake in the oven at 180.C for 1 ½ hours.

Meanwhile, melt the remaining butter in a saucepan. Add the rest of the onion and cook over a low heat, stirring occasionally, for 10 minutes, until soft but not browned. Add the flour and cook over a low heat, stirring for
2 minutes.

Remove the pan from the heat and gradually blend in the milk, stirring after each addition to prevent lumps forming. Bring to the boil slowly and continue to cook, stirring all the time, until the sauce comes to the boil and thickens. Simmer very gently for a further 2-3 minutes, then add salt and pepper to taste.

To serve, turn out the meat loaf onto a warmed serving plate and peel off the lining paper. Serve immediately with the hot onion sauce.

This time I'm only compiling the book,and will be passing the book onto the Charlton Recovery Committee for them to publish and distribute.

An Idea for Marysville

2 years ago today, the smoke has not cleared, the fires of Black Saturday are still burning, threatening the townships of Alexandra and Yea. People who have evacuated from Marysville are in tents in Alexandra and still surrounded by the smell and palls of smoke being generated.

The news reports showed face after face of people I know, struggling to cope, struggling to comprehend the loss of everything they have known. From simple things like the favourite pot to something as historic as generations of family photos albums.

I realised that not only did Marysville need help to rebuild, they needed something that was theirs and theirs alone. The idea of the cookbook came about from one person who'd lost everything except the melon patch. She couldn't remember her mothers recipe for her special jam. The idea of the Marysville Cookbook came about from that.

The amazing amount of $3700.00 has been raised and given back to Marysville - you can see the results and recipients here. Money Donated so far 1st April 2011, #13

This has been my way of helping, I've been the sole person behind the Cookbook.

Sweet Potato, Sage & Leek Frittata

4 Medium Sweet Potatoes, Finely Sliced
1 Large Leek, Sliced & Well Washed
1 Tspn Crushed Garlic
3-4 Leaves Silverbeet, Shredded
150g of Fresh Ricotta
2 Eggs
1 Cup of Low Fat Grated Cheese
2 Tbspn of Sage Chopped
1 Cup of Milk

Cook the sweet potato in a microwave for 10 minutes on HIGH. Grease a large quiche dish. Add the leek and garlic. Bake in a moderate oven for
5-6 minutes. In large bowl fold together silverbeet and crumbled ricotta. In a separate bowl combine sweet potato, leek, garlic, eggs, milk, sage, cheese, salt and pepper. Place the remaining mashed sweet potato mixture on top. Cook until brown approx 30 minutes.
Cut into serving sized pieces and serve with crisp green salad.

Tuna Puffs

425g of Canned Tuna
¼ Cup Mayonnaise(See pg 97)
1 Chopped Onion
1 Egg
1 Tspn of Curry
Puff Pastry (Thawed)

Combine the tuna, mayonnaise, onion, egg and curry. Lay the puff pastry out and cut in diagonal ½’s to enable the making of triangle pockets. Spoon the mixture onto half the pastry sheet. Wet the edges and fold over the triangle. Seal pocket by pressing down edges with a fork or similar tool, which enables ‘meshing’ of the edges. Bake in an oven pre-heated to 210.c for 10-15 minutes until golden brown. Serve with a fresh garden salad.

Variation:- Can add corn if you don’t have enough tuna!

¼ Cup of Soy Sauce
1 Clove of Garlic, Crushed
1 Tspn of Freshly Grated Ginger
1 Chicken & Garlic Stock Cube
2 Tbspn of Dry Sherry
1 Tbspn of Honey
1kg of Chicken Drumsticks

Combine all ingredients, except the chicken in a bowl. Mix well. Add drumsticks, cover and refrigerate overnight; stirring occasionally. Place drumsticks in a baking dish and pour over the marinade. Bake in a moderate oven for 35-40 minutes. Baste occasionally with the pan juices during the cooking. Serve with rice.

Lemon Garlic Chicken Wings

2 Tbspn Dark Soy Sauce
1 Tbspn of Oil
1 ½ Tbspn Lemon Juice
1 Tbspn of Honey
1 Chicken Stock Cube
2 Cloves of Garlic, Crushed
1 Tspn Grated Fresh Ginger

Combine all the ingredients in a bowl, cover and refrigerate for several hours, or overnight. Drain wings, reserve marinade. Place wings in an ovenproof dish, bake in a moderately hot oven for 35 minutes or until wings are tender, brushing occasionally with the reserved marinade.

1kg of Chicken Thighs, Minced
80g of Dried Breadcrumbs
4 Spring Onions, Sliced
1 Tbspn Coriander Powder
3 Tbspn of Sweet Chilli Sauce
2 Tbspn Lemon or Lime Juice.

Preheat oven to 200’C. Mix mince, breadcrumbs, spring onions, coriander, chilli sauce and lemon juice.
Form mixture into walnut sized balls. Place on baking tray and cook for
15-20 minutes.
Serve with soy sauce or sweet chilli sauce.

Cheesy Spinach Quiches

3 Sheets of Rolled Puff Pastry
125g of Grated Tasty Cheese
2 Spinach Leaves, Shredded
½ Small Onion, Chopped
1 Egg
3 Tbspn of Cream
1 Tbspn of Finely Chopped Parsley
1 Tbspn French Mustard
Seasoning to Taste
Optional:- Bacon, Chopped

Cut the pastry into 6cm rounds with a pastry cutter and press into shallow patty tins. Combine all the remaining ingredients and divide equally between the pastry cases. Bake at 200.C for approx. 20 minutes or until cooked.
Variation:- May be made as one large quiche if desired.

Egg & Cheese Turnovers

3 Eggs (Well Beaten)
3 Oz of Dry Cheese (Grated)
1 Oz of Butter
6 Oz of Puff or Short Pastry
Salt & Pepper
)Substitute Pastry for Puff Pastry & Add Some Mustard for Flavour)

Melt the butter in a saucepan, then stir in the cheese, salt and pepper and the eggs. Reserve just a little egg to brush over the turnovers.
Stir the mixture over a very gentle heat until it thickens, but DO NOT let it boil or it will curdle. As soon as it is thick and creamy, take it off the heat and set aside to cool.
Roll out the pastry and cut into squares. Place a spoonful on one half of the square. Fold over the other half of the square. and moisten the edges with egg to join them. Put them onto a greased baking tray. Brush over with egg and bake in a hot oven for about 10 minutes.

Another Special Request!

2 Tbspn of Golden Syrup
2 Tbspn of Sugar
1 Tspn of Bi-Carbonate Soda

Boil the syrup and sugar for approx. 10 minutes. Remove from the heat and stir in the soda quickly. Whilst still bubbling, pour onto a greased tray. Allow to set and break or cut into pieces.
DO NOT spread the honeycomb with a spoon after pouring as this will flatten the honeycomb.

I've been using this recipe for 30 odd years, it's one of the first I remember ever cooking

Bacon & Potato Quiche - Mircowave

250g Potatoes, Peeled/2cm Cubed
6 Eggs
250g of Peas
¾ Cup of Milk
185g Cheddar Cheese, 1cm Cubes
2 Spring Onions, Finely Sliced (can use regular white onion)
6 Rasher of Rindless Bacon, cut into 1cm Squares
Pepper to Taste

Cook the bacon in a 25cm flan dish, covered with paper towel on HIGH for 5-6 minutes, stirring ½ way through until browned. Transfer to paper towels to drain. Discard all except 2 tablespoons of the bacon dripping.

Stir the potatoes and peas into the bacon dripping. Cook, covered on HIGH for 4-6 minutes until tender, stirring halfway through. Heat the milk in a medium bowl on HIGH for 2-2 ½ minutes until small bubbles appear around the edges. Add eggs, beat until blended. Add cheese, spring onions, pepper and reserved bacon. Mix well.

Carefully pour the mixture over the vegetables in the dish. Elevate the dish on an upturned ramekin. Cook on MEDIUM for 10-12 minutes, until egg mixture is slightly set, but still moist. Stirring cooked edge towards the centre twice.

Allow the quiche to stand, covered on a heatproof surface for 5 minutes. Serve hot.

Can be frozen and reheated has desired

Pasties - My Way

This recipe didn't make it into the cookbook - simply because it never stays the same!

Pasties - My way

8 sheets of puff pasties (de-thawed)
500g of minced beef
2 potatoes
3 carrots
2 onions, diced
2 good handfuls of frozen diced vegies, if you want more colour
1-2 teaspoons of curry powder (can use Paprika) personal taste
Shake of Salt and Pepper

(we change the vegetables around depending on the season)
Remember that pasties were traditional to Cornwell and were taken into mines as an easy meal.)

Pre-heat to Oven to 200’c. Par-boil the vegetables. Brown the onion, add the meat and cook until no longer red, but don’t over cook.
Add the vegetables, and flavourings of your choice. Mix well.
Lay out the de-thawed puff pastries sheets (1 per pastie) – place 2-3 cups of mixture on one ½ of the sheet, assuming the shape of a triangle.
Wet the edges of the ‘triangle’ and fold over the pastry to form a triangle. Seal well, brush with a light layer of milk and place on a greased tray. Cook for approx 20min.

Another method is NOT to cook any ingredients, divide the mixture evenly between 12 round pastry sheets, seal, brush with milk and then cook for 10min at 200’c and then 180’c for 30-35min

This recipe can be halved, doubled etc, depending on what is required

(This recipes feeds 2 people per triangle) with a salad on the side

Old Fashioned Bread & Butter Pudding - Microwave

12 Slices of Day Old Bread, Toasted
60g of Margarine
2 Cups of Cream
1 Cup of Milk
4 Eggs
¾ Cup of Sugar
½ Tspn of Cinnamon
1/8 Tspn of Nutmeg
1/8 Tspn of Ground Cloves
1 Tspn of Vanilla Essence
Icing Sugar To Decorate
½ Cup of Sultanas

After toasting the bread, butter, whilst warm and remove the crusts. Cut diagonally to make triangles. Arrange the slices in a baking tray. Working from the outside in, so that the edges overlap. Pour the cream and milk into a glass jug and microwave on HIGH for 4-6 minutes, until small bubbles appear around the outside. With the mixer on medium speed beat the eggs, sugar, cinnamon, nutmeg, cloves and vanilla essence in a medium bowl, until blended. Add a small amount of the hot milk mixture. Slowly pour the egg mixture back into the remaining milk, beating quickly to prevent lumps forming. Carefully ladle the mixture over the toasted triangles. Add the sultanas, evenly over the top. Elevate the baking dish on upturned ramekins. Cook on MEDIUM for 14-16 minutes, until a knife inserted in the middle, comes out clean. Allow to stand on a heatproof surface until slightly cooled. Dust with icing sugar and serve warm.

Corn Chowder - Microwave

30g of Margarine
3 Tspn of Plain Flour
2 Tspn of Paprika
250g Potatoes, Peeled & Cubed
1 Celery Stalk, Finely Chopped
½ Onion, Chopped
½ Tspn of Salt
1 Cup of Chicken Stock
1 Cup of Milk
½ Cup of Cream
375g Whole Corn Kernels
Chopped Parsley to Garnish

Heat the butter in a deep 3 litre bowl, covered with paper towel on HIGH for 45 seconds or until the butter has melted. Stir in the flour and paprika, mix well. Add the potatoes, celery, onion, salt and stock. Cook, covered on HIGH for 10-12 minutes, or until the vegetables are tender, stirring twice. Add the milk, cream and corn to the vegetable mixture. Cook, covered on HIGH for 6-8 minutes, or until the corn is tender. (DO NOT BOIL) stirring twice. Ladle soup into warmed bowls, garnish with parsley. Serve hot.

Chicken Wings (Marinated)

Small Amount of Garlic to Taste
½ Sherry- ½ Soy Sauce - Enough to Cover

Mix together and allow to stand for approx. 45 minutes. Cook in a moderate oven. This recipe tastes better if it is cooked and allowed to stand overnight and then reheated.

The 2nd November, 2010 is the Sparkling Wine Festival, the only festival celebrating Sparkling Wine in Victoria. It will be held in Marysville on the 2nd November 2010.

There will be stalls, tastings, sampling, an easy 90 minute drive from Melbourne CBD.

The 7th November, 2010 is the 2nd Annual Marysville Marathon, from the less athletic of us, there is a 3km walk. Why not give it a try? For the more adventurous (and experienced) there are 10km up to 40km Marathon. It's still not too late to book your place.

I will be at the Marysville Marathon, with copies of The Marysville Cookbook, of which $10 from each sale goes straight back to the community. Why not drop past and see me if you are around?

Marysville Cookbook in Marysville, 7th November 2010

The 2nd Marysville Marathon will be run in Marysville on the 7th November 2010. I was there for the 1st one, my son ran.

This year I am going to be there with the Marysville Cookbook, which will be for sale, with $10 from each sale going back to community of Marysville.

So far a total of $2400.00 has been raised and given back to the community as per previous posts in this blog. I hope to continue doing so for as long as possible. It may only be me – but it only takes one person to change the world (well Marysville) and I intend to help my childhood town stand on its own two feet through the community groups.

So help me help Marysville rebuild after the devastating bushfires of February 7th 2009 now known as Black Saturday.

Scones – Lemonade

3 Cups of Self-Raising Flour
1 Cup of Cream
1 Cup of Lemonade

Mix all ingredients together; if sticky add more flour, gently pat down into ½ inch thick and use a scone cutter. Place in oven, which is approx. 260.C for 15-18 minutes.

Banana Cake

(If you want to make muffins, just divide the mixture into muffin trays, adjust cooking time and viola done!)Enjoy!

125g of Butter
1 Cup of Brown Sugar
2 Eggs
3 Bananas
1 Tspn of Baking Powder
2 Tbspn of Milk
1 ½ Cups of Self-Raising Flour
Topping:-
2 Tbspn of Brown Sugar
1 Tbspn of Butter
2 Tbspn of Milk
Qty of Icing Sugar
Walnuts

Cream together the butter and sugar, add the eggs and beat well. Mash the bananas, dissolve the baking powder in the milk. Add the bananas. Combine the banana mixture with the butter mixture, stir in the flour.
Place in an 8’ sandwich tin which has been greased. Bake in a moderate oven for 25 minutes.
For the topping:- Cream the sugar and butter. Add the milk and then enough icing sugar to make a nice consistency. Top with walnuts.

What you haven't been told about the Marysville Cookbook

The Cookbook for Marysville came about after the February 2009 fires, now known as the Black Saturday Fires.

The Marysville Cookbook was originally created for the residents of Marysville and 300 copies were given to the residents at no cost. At that point in time, the residents didn't need money, they didn't need sympathy - they needed something that was theirs and theirs alone. Something that would help them, keep family, mind and soul together. There was a message of hope, a message of thank-you and recipes just like, nanna and mum used to cook - comfort food, no complications, no spending 2 hours slaving over a hot stove, that you didn't have. They are all simple recipes, with simple ingredients.

What I haven’t told you or anyone else for that matter, is that all except for $962 came from my own pocket. $750.00 from 3 x businesses that I knew and who offered to help and an online forum called Oz Round Table who together raised $212.00 off their own back.

Suffice to say that the 3rd print is about to hit the road running and I’m still very much remaining in the red.

It’s my choice to continue to produce the cookbook, over 333 books have been given to affected residents and I want to continue doing so because I know that the one smile, the one letter of thanks is payment enough.

I just hope my pockets hold out!

These are two of the many thanks I have received. I haven't published others because I didn't really understand the impact this cookbook would have on the recipients, and the emotional toll and happiness to have something that was theirs and theirs alone, made for them, by me.

When I first started giving the books out there were many thanks sent, my mind, like many others associated with the fires, had trouble understanding that everything was gone. Just like that. In such a short period of time.

The house I grew up in, not demolished by developers, but demolished by fire, a fire called "Black Saturday"

It's hard to describe the emotion. I don't live in the area of Marysville, but I made a midnight dash that horrible night with the fire burning everywhere I looked.

I just hope that one little book makes life a little more bearable for the recipients. I can't replace what was lost.

May you never suffer the loss that many suffered on the 7th February 2009 or Black Saturday as it will be known forever in the minds of Australians.

May your path in life be smooth and trouble-free.

How to publish a cookbook

1. Collect the family favourite recipes, the one you and mum and nanna have horded away somewhere in a little book

2. Correlate them into some sort of order

3. Hit the computer and start typing

4. Now, with your extensive knowledge of word processing and computer programs, start inserting behind the text, the references and indexes required for the recipe index.

5. Pay special attention to the text used, because some text will automatically generate tags, others do not. If you let 2 pages go through with the automatically generated text, it can be fun figuring it out

6. Proof read, proof read, and proof read and proof read again, now read backwards and you might be somewhere near 90% correct.

7. Check the index references again and make sure no duplications, great fun – keep smiling

8. Find a printer, someone who will not rip you off, someone who will talk to you, even if you want small runs, you are not a millionaire – even if some printers
think you are

9. Proof-read again and read aloud and drive everyone nuts, now read backwards again, just for the thrill

10. The printer has asked for the document to be submitted in PDF form, this could be interesting, PDF programs cost a mint and your first born.

11. Do a Google search and find www.dopdf.com it does convert, but sometimes moves things around, quick proof again, making sure that red marker is very handy.

12. Sit down again, correct the PDF corrections and convert again – only 200 movements of text this time.

13. Repeat steps 11 and 12 as many times as necessary – remembering that the deadline is in 24 hours time

14. It has to be right – you are sleep deprived, if the bloody thing isn’t right –you’ll throw it out the window

15. Send the CD to the printers, sleep, get up – check the final draft and realize there is a page number error

16. Call the printers, look like a fool, tell them you will send new copy priority post.

17. 3 weeks later – the proof arrives, you check it page by page (it’s unbound)

18. You approve it – by signing and sending with payment of your second born and the monetary requirements.

19. The books turn up and hold your head and wonder what the hell have you done.

The end – repeat the process if you think you could do with the grey hairs and stress!

Apricot Coconut Log

250g of Dried Apricots (2 Cups) Chopped
1 Cup of White Marshmallows (aprox 6)
250g of Nice Biscuits, finely crushed
1/2 cups of chopped waluts (you could omit OR replace with something else!)
400g Can of Condensed Milk
2 Cups of Coconut
1 Teaspoon of Vanilla

Combine all the ingredients (excluding the coconut) in a bowl. Mix well. Divide the mixture into four. Shape each portion into log shapes about 3cm in diameter. Roll in the coconut. Place on a tray; cover and refrigerate for several hours. There logs will keep, covered in the refrigerator for until to a month.

Apricot Slice

1 Cup of Chopped Dried Appricots
1 Cup of Coconut
1 Cup of Brown Sugar
125g of Melted Butter
1 Cup of Self-Raising Flour
1 Egg
1 Cup of Chopped Dates

Soak the apricots in hot water for 30 minutes. Mix the other ingredients with the drained apricots. Then dpread into a biscuit tin. Bake in a moderate over. Ice with lemon icing and cut into squares and serve.

It's been a long time between posts - unfortunately there has been a lot occuring in my private life. But somehow I found the time to build a 'proper' HTML site, that has the proper paypal button as well as the same information you can see here.

(The other site is only a basic site. Here is a little more personal)

Saturday 7th February 2009, now known as Black Saturday, saw the state of Victoria devastated by uncontrollable bushfires. There were many towns wiped from maps, thousands of buildings lost and 173 people perished.

The devastation of Marysville was almost complete.

The township, needed something that was theirs and theirs alone. So I created the "Cookbook for Marysville"

Almost 300 copies were printed and given to the residents of Marysville, with a message of hope and thank-you to emergency personnel. Many people wanted to buy the book and the only way that was possible was for a second run to be printed.

The 2nd Edition of the Cookbook for Marysville has been delayed due to printing problems.

Only a week or so - Once I have the books in my hot little hand - I will make them available to mailing lists and hopefully Amazon.

I didn't want to get people's hopes up and say they would be available XYZ when in fact they wouldn't be.

Estimated time at this stage is 28th of February 2010.

250 Grams Fettuccine
20 Grams Butter
1 Onion, Chopped
3 Rashers of Bacon, Sliced
125 Grams Button Mushrooms,
Sliced 1 Tbspn of Flour
1 Cup of Fresh Parmesan Cheese Only
1 ½ Cups of Milk

Cook the fettuccine in a saucepan of boiling water for 10 minutes or until ‘al dente’ Drain and keep warm. Melt the butter and sauté the onion, bacon and mushrooms until softened. Add the flour and cook, stirring for 1 minute. Add the milk and ¾ cup of Parmesan cheese and cook, stirring continuously until thickened. Serve sauce over hot fettuccine and garnish with remaining Parmesan.

6 Medium Cooking Apples
½ Cup of Sugar to Taste
½ Tspn of Cinnamon
½ Tspn of Ground Cloves
1 Cup of Plain Flour
60-90 Grams of Butter
Extra Sugar & Cinnamon

Peel and slice the apples and put into a deep pie dish (23cm) or casserole dish. Sprinkle with sugar, cinnamon and cloves. Cover with waxed paper and cook on HIGH for 5 minutes while making the crumble topping. Put flour into a mixing bowl and rub in the butter. Sprinkle this mixture over the apples and top with extra sugar and cinnamon. Return to the microwave and cook for 3-4 minutes on HIGH. For a browner top, place under a heated griller for 1-2 minutes.

The cookbook for Marysville - has not broken any records yet - considering it is non-profit and $5.00 from each book is going back to the town. I can't complain - No real advertising has been done (that costs money) but a total of 89 books have been sold with a total of $445.00 being donated already.

The ISBN has been acquired and should arrive in the new year sometime.

The quote is well on the way - apparently the printers aren't closing for the tradional Christmas period - so no complaints there.

This book will see $10.00 going into the Township of Marysville and will be used where needed to try and re-establish all that is missing.

Golden Butternut Pumpkin Soup

3 Tspn of Margarine
1 Brown Onion, Chopped
1 Clove of Garlic, Crushed
1 Small Stalk Celery, Chopped
1 Med Butternut Peeled & Cubed
4 Cups of Chicken Stock
½ Tspn of Dried Marjoram
1 Bay Leaf
¼ Tspn of Pepper
1 Cup of Milk
Parsley Sprigs

In a large saucepan, melt the margarine over a moderate heat, add the onions, garlic and celery, cook uncovered, until the onion is soft, about 5 minutes.
Add the pumpkin, stock marjoram, bay leaf and pepper, raise the heat to moderately high and bring to the boil, about 4 minutes. Adjust the heat so that the mixture bubbles gently, cover and simmer for 20 minutes or until the pumpkin is tender. Remove and discard the bay leaf and cool the soup for 5 minutes.
In a blender, puree the soup and return to the saucepan and stir in the milk, place over a moderate heat and bring to serving temperature, about 10 minutes. DO NOT boil or the soup will curdle. Ladle into bowls, garnish with parsley and serve.

Of the Cookbook for Marysville is in the mail, on the way to the printers. Getting a quote (formality) and then within 2-3 weeks should be on the way to my front door.

I can’t believe that something that I did for a long-time family friend, (someone that watched me grow up) started this.

I am now able to help the township with the sale of these books. I am hoping, providing the costs for printing are not too prohibitive to be able to donate $10.00 from each cookbook sale this time.

All of the funding for this project has come from my own pocket.

1 Cabbage
½ pint of Milk
1 oz of Butter
1 Large Onion
Salt & Pepper
Cream (Optional)

Remove the outer leaves from the cabbage, wash well and slice the remainder. Peel and slice the onion. Put them into a saucepan with 3 pints of water and a teaspoon of salt. Boil until the vegetables are quite soft – about 25 minutes. Skim well.
Rub through a sieve. Return to the pot, add the butter and milk. Season to taste with salt and pepper and simmer for 15 minutes. Take the pan off the stove and stir in 1-2 tablespoons of cream.
Make very hot and serve.

Serves 6-8

Marysville Cookbook

After seeing what I saw and hearing about one resident in particular - I had to do something. Something to make people realise that there are others in the same siutation - that although possessions have been lost, you are here, you can re-build and you can move on. Consequently I had a cookbook printed, one with simple plain recipes, that require simple plain ingredients. Nothing fancy - just wholesome food with easy to follow instructions and a conversion table, so that everyone of every age can use the book.

200 copies have been given to the residents of Marysville to help them start re-building homes and life.

You don't need complication at a time like this.

Now you have the opportunity to purchase a very limited number of books, that are first run, never to be repeated. I am sure other books will follow - but this is it for the first run.

Any profits are at this stage given to community groups within the township that previously used to rely on fund-raising to generate income - Currently the Christ Church Marysville Guild will be the recipient - as they are sponsoring a child from overseas and are unable to continue doing so without the street stalls that occured on a yearly basis.Your assistance will be greatly appreciated.

You will notice on the left some sample photos contained within the book. There are 29 photos in all. All local and representing the township as it once stood. From motels to self-contained accomodation to local scenery and attractions.

There are 155 pages in total, containing plain wholesome simple recipes and some tips and hints to help you in the kitchen.

There is a contents list, that helps you decide what you want to cook at the turn of a page. If you have a preference for slower cooker, or microwave, all the recipes and cooking methods are listed accordingly in the extensive index. If you have excess produce or ingredients you can refer to the index for that food stuff and you will find a solution.

I hope others can find happiness and fulfilment in my favourite recipes.

My children love the sausages and onion recipe, great way to use onions!

I love the cabbage soup - it's sweet and beautiful on a cold winters day. Freezes well too.

I can't replace the books that have been lost. I can't replace the favourite recipes that everyone had collected through the generations. I can only hope that this book, helps the collection start again.

I have purposely left blank pages at the back of each section, to enable the addition of hand-written favourite recipes.

I had a cookbook printed, one with simple plain recipes, that require simple plain ingredients. Nothing fancy - just wholesome food with easy instructions. You don't need complication at a time like this.

Here is the introduction :-

Welcome to the cookbook, designed and printed for the residents of Marysville and surrounds.
This book is not your average cookbook – that you look at – and take a little bit from and then put back on the shelf
You are meant to write in it. You are meant to enjoy it and do what you do best –
COOK!
There is plenty of room in the margins for scribbles – there is plenty of space for you to add your own recipes – there are blank pages, just for that purpose.
The idea of this book came about with one person, who like you, lost everything they ever owned, saying that they were unable to remember a special recipe that was passed down from their mother.
It will be a long haul back – but like the fires of 1939 and those that made it through – You can and will do it. You need to remain strong – You MUST talk about what has happened, both amongst yourselves to help and support each other and with outsiders, this will ensure that your children and your children’s children never forget and are never affected in the same way.
Now is the time to make sure that you don’t become complacent, that you keep your network of friends and families close. You need their support more than ever. Yes there will be rough times ahead – but ask your friends and they will help you – that is the spirit of Australia and the nature of small towns.
DO NOT BE AFRAID TO ASK FOR HELP
I can’t replace that recipe – but I can try and find new recipes to replace the old. Most of these recipes are old recipes with the old measurements, they are simple and easy to make. I only hope you can enjoy these recipes as much as I do and they make your kitchen the heart and soul of your new home.
