Old Fashioned Bread & Butter Pudding - Microwave

(one of my dads favourites)

12 Slices of Day Old Bread, Toasted
60g of Margarine
2 Cups of Cream
1 Cup of Milk
4 Eggs
¾ Cup of Sugar
½ Tspn of Cinnamon
1/8 Tspn of Nutmeg
1/8 Tspn of Ground Cloves
1 Tspn of Vanilla Essence
Icing Sugar To Decorate
½ Cup of Sultanas

After toasting the bread, butter, whilst warm and remove the crusts. Cut diagonally to make triangles. Arrange the slices in a baking tray. Working from the outside in, so that the edges overlap. Pour the cream and milk into a glass jug and microwave on HIGH for 4-6 minutes, until small bubbles appear around the outside. With the mixer on medium speed beat the eggs, sugar, cinnamon, nutmeg, cloves and vanilla essence in a medium bowl, until blended. Add a small amount of the hot milk mixture. Slowly pour the egg mixture back into the remaining milk, beating quickly to prevent lumps forming. Carefully ladle the mixture over the toasted triangles. Add the sultanas, evenly over the top. Elevate the baking dish on upturned ramekins. Cook on MEDIUM for 14-16 minutes, until a knife inserted in the middle, comes out clean. Allow to stand on a heatproof surface until slightly cooled. Dust with icing sugar and serve warm.
