Chicken in Apricot Nectar

(Special Request) - for my friend in Wagga, NSW!

1.5kg of Chicken Pieces
2 Medium Onions, Optional
60g of Butter
1 Tbspn of Cornflour
425g of Can Apricot Nectar
1 Packet of French Onion Soup

Melt the butter in a frying pan, add the chicken and cook until brown, Remove the chicken and add the sliced onions to the pan, sauté until soft. Add the flour and mix until well blended, Place the onions mixture, the soup mixture and the apricot nectar into a casserole dish, mix, then add the chicken, making sure the chicken is covered by the mixture. Place in a 180’ pre-heated oven and cook until the chicken is cooked through. Serve with rice or vegetables.
