Apricot Coconut Log

250g of Dried Apricots (2 Cups) Chopped
1 Cup of White Marshmallows (aprox 6)
250g of Nice Biscuits, finely crushed
1/2 cups of chopped waluts (you could omit OR replace with something else!)
400g Can of Condensed Milk
2 Cups of Coconut
1 Teaspoon of Vanilla

Combine all the ingredients (excluding the coconut) in a bowl. Mix well. Divide the mixture into four. Shape each portion into log shapes about 3cm in diameter. Roll in the coconut. Place on a tray; cover and refrigerate for several hours. There logs will keep, covered in the refrigerator for until to a month.
