Cabbage Cream Soup



Here is another recipe from my book titled “Cookbook for Marysville” You can purchase this book directly from myself, with the funds going directly to the township of Marysville itself. The recipient of the funding will change as needs arise.

1 Cabbage
½ pint of Milk
1 oz of Butter
1 Large Onion
Salt & Pepper
Cream (Optional)

Remove the outer leaves from the cabbage, wash well and slice the remainder. Peel and slice the onion. Put them into a saucepan with 3 pints of water and a teaspoon of salt. Boil until the vegetables are quite soft – about 25 minutes. Skim well.
Rub through a sieve. Return to the pot, add the butter and milk. Season to taste with salt and pepper and simmer for 15 minutes. Take the pan off the stove and stir in 1-2 tablespoons of cream.
Make very hot and serve.
