3 Eggs (Well Beaten)
3 Oz of Dry Cheese (Grated)
1 Oz of Butter
6 Oz of Puff or Short Pastry
Salt & Pepper
)Substitute Pastry for Puff Pastry & Add Some Mustard for Flavour)
Melt the butter in a saucepan, then stir in the cheese, salt and pepper and the eggs. Reserve just a little egg to brush over the turnovers.
Stir the mixture over a very gentle heat until it thickens, but DO NOT let it boil or it will curdle. As soon as it is thick and creamy, take it off the heat and set aside to cool.
Roll out the pastry and cut into squares. Place a spoonful on one half of the square. Fold over the other half of the square. and moisten the edges with egg to join them. Put them onto a greased baking tray. Brush over with egg and bake in a hot oven for about 10 minutes.
