Tuna Puffs

425g of Canned Tuna
¼ Cup Mayonnaise(See pg 97)
1 Chopped Onion
1 Egg
1 Tspn of Curry
Puff Pastry (Thawed)

Combine the tuna, mayonnaise, onion, egg and curry. Lay the puff pastry out and cut in diagonal ½’s to enable the making of triangle pockets. Spoon the mixture onto half the pastry sheet. Wet the edges and fold over the triangle. Seal pocket by pressing down edges with a fork or similar tool, which enables ‘meshing’ of the edges. Bake in an oven pre-heated to 210.c for 10-15 minutes until golden brown. Serve with a fresh garden salad.

Variation:- Can add corn if you don’t have enough tuna!
